Truly speaking, winters are incomplete without chicken soup, Yakhni, peanuts, and some dry fruits. But what is more fascinating about the season is having a bowl of hot yakhni or soup. In this article, we will tell you how you can cook chicken yakhni and soup in your home.

Chicken Yakhni Recipe in Urdu

Ingredients

  • (سیلری دو سے تین ﴿چھوٹی کٹی ہوئی
  • زیتون کا تیل ایک سے دو کھانے کے چمچ
  • پانی آٹھ پوائنٹ
  • (پیاز دو ﴿درمیانے سائز کے
  • ثابت چکن ایک عدد
  • (گاجر تین عدد ﴿چھوٹی کٹی ہوئی
  • کالی مرچ ایک چائے کا چمچ
  • نمک ایک چائے کا چمچ
  • تھائم اور روزمیری حسبِ ضرورت

Method

  1. برتن میں تیل گرم کرکے پیاز، گاجر اور سیلری شامل کر کے پکائیں۔
  2. پھر چکن، پانی، نمک اور باقی مصالحے شامل کریں۔
  3. تھوڑی آنچ بڑھا کر اسے ابال آنے تک پکائیں۔
  4. پھر آنچ ہلکی کر دیں اور چار سے پانچ گھنٹے کے لئے پکائیں۔
  5. چکن کی یخنی تیار ہے۔

Chicken Yakhni Recipe in English

Ingredients

  • 700-800 gm chicken pieces
  • 6-7 Tbsp oil
  • 1 cup of curd
  • 2 pieces green cardamom
  • 2 pieces brown cardamom
  • 2 small cinnamon stick
  • 1 tsp saunth
  • 1 tsp saunfpowder
  • Pinch of Kashmiri red chili powder
  • Salt to taste

Method

  1. Heat the oil and fry the chicken till brown.
  2. Once done, remove the chicken and keep aside.
  3. In the same pan saute the cardamom and cinnamon. Mix a bit of water into the saunfand saunth powders and add them to the pan. Cook for 2-3 minutes, switch off the fire and bring the pan to room temperature.
  4. Now mix the curd into the pan and cook over a slow fire for two minutes. Then add the chicken to the curd. Sprinkle the chili powder and salt. Stir, cover and cook for 10-15 minutes till done.
  5. Serve Chicken Yakhni hot with rice.

Chicken Soup Recipe in Urdu

Ingredients

  • چکن اسٹاک چھ کپ
  • (چکن بریسٹ ایک عدد (کٹی ہوئی
  • نمک ایک چائے کا چمچ
  • سفید مرچ ایک چوتھائی چائے کا چمچ
  • کالی مرچ آدھا چائے کا چمچ
  • سیراجا ساس ایک کھانے کا چمچ
  • ہوئی سون ساس ایک کھانے کا چمچ
  • چکن پاؤڈر ایک کھانے کا چمچ
  • (بند گوبھی آدھا کپ (باریک کٹی ہوئی
  • (گاجر دو کھانے کے چمچ (کٹی ہوئی
  • (مشروم دو کھانے کے چمچ (سلائس کی ہوئی
  • ہری پیاز کے پتے ایک چوتھائی کپ
  • (ہرا دھنیا دو کھانے کے چمچ (کٹا ہوا
  • کارن فلور تین کھانے کے چمچ

Method

  1. چکن اسٹاک کو گرم کرکے اس میں چکن شامل کرکے پکائیں یہاں تک کہ چکن گل جائے۔
  2. پھر اس میں بند گوبھی، گاجر، مشروم، نمک، سفید مرچ، کالی مرچ، سیراچا ساس، ہوئی سن ساس اور چکن پاؤڈر شامل کرکے دس منٹ کے لئے پکائیں۔
  3. پھر کارن فلور کو آدھا کپ پانی میں گھول کر سوپ کے اوپر ڈال دیں اور گاڑھا ہونے تک پکائیں۔
  4. آخر میں ہرا دھنیا اور ہری پیاز کے پتے ڈال کر گرم گرم سرو کریں۔

Chicken Soup Recipe in English

Ingredients

  • 55g/2ozbutter
  • 2onions, sliced
  • 2 stickscelery, finely chopped
  • 2carrots, finely diced
  • 25g/2oz plainflour
  • 2 litres/2 pintschicken stock
  • 450g/1lb cookedchicken, skinned and shredded
  • 1 tbsp chopped freshparsley
  • salt and freshly groundblack pepper

Method

  1. Melt the butter in a large saucepan over a medium heat and gently fry the onions, celery and carrots until they start to soften.
  2. Stir in the flour and cook for 2 minutes. Add the chicken stock and bring the mixture to the boil, stirring as you do so. Season with salt and pepper, then reduce the heat until the mixture is simmering and simmer for 10 minutes, until the vegetables are tender.
  3. Add the cooked chicken and cook until heated through. Adjust the seasoning, stir in the parsley and serve.
