If vermicelli is the desserts of Eid al-Fitr, then meat dishes are the delicacy of Eid Al Adha. Beef Karahi and Mutton Karahi are the two main foods of the auspicious day of Eid al-Adha. When prepared in green chili base, reduced in tomato, mixed with spicy yogurt and contains the excellent mixture of other materials, Karahi is something special that everyone likes to have.

Many of us think a hundred time before ordering a Mutton Karhai but Eid al Adha is the day when there is abundant of meat. So, make the plan of cooking Mutton Karhai on Eid al Adha. Here are some recipes.

  • (پیاز دو عدد (درمیانی، باریک کٹی ہوئی
  • (ٹماٹر چار عدد (باریک کٹے ہوئے، درمیانے
  • ہرا دھنیا ایک چوتھائی گٹھی
  • (گرم مصالحہ ایک چائے کا چمچ (پسا ہوا
  1. مٹن کے ٹکڑوں کو پین میں تیل اور ادرک لہسن کے پیسٹ کے ساتھ بھون لیں۔
  2. جب مٹن کا رنگ تبدیل ہوجائے تو اس میں ادرک، زیرہ، دھنیا، ہلدی، لال مرچ اور نمک شامل کردیں اور آنچ کو ہلکا کرکے اسے دم پر رکھ دیں۔
  3. بیس سے پچیس منٹ بعد اس میں ہری مرچ، پیاز، ٹماٹر اور ہرا دھنیا شامل کرکے بھون لیں۔
  4. جب تمام سبزیاں تھوڑی سی پک جائیں تو اس میں گرم مصالحہ شامل کرکے بھونیں اور تیار ہونے پر سرو کریں۔
  5. مزے دار مصالحہ مٹن کڑاہی تیار ہے۔

شاہی مٹن کڑاہی

اجزاء:

مٹن —– ڈیڑھ پاؤ
ٹماٹر —— حسبِ ضرورت
پیاز —— دو عدد
لہسن ادرک پیسٹ —— دو کھانے کے چمچ
لال مرچ —— دو کھانے کے چمچ
گرم مصالحہ ——آدھا کھانے کا چمچ
ہری مرچ —– چھ عدد
لیموں —– دو عدد
بادام ——- دس عدد
کاجو —— دس عدد
تیل —— آدھا کپ
نمک —— حسب ذائقہ

Ingredients

  • 750 gms diced lamb/ mutton or beef (You can use meat with bones, there is no difference in the method of cooking and preparation)
  • Two onions sliced (medium to large size)
  • 1 cup oil
  • Two tbsps meat tenderizer (best meat tenderizer is green papaya paste)
  • 1/2 cup vinegar
  • One tsp ginger paste
  • 1 tsp garlic paste
  • One tsp red chili paste (OPT) (For Hot Flavour)
  • ½ tsp cinnamon powder (fresh)
  • Two cloves and two big cardamoms crushed
  • One tbsp cracked black pepper
  • ½ tsp of nigella seeds (kalonji seeds)
  • 2 tomatoes
  • 1 cup yogurt
  • A pinch of turmeric

FOR WHOLE GARAM MASALA

  • One big cardamom
  • 1 small cardamom
  • 1 sticks of cinnamon
  • Few fenugreek seeds and leaves
  • ½ tsp cumin seeds

FOR GARNISHING

  • 2 – 4 green chilies sliced vertically
  • A bunch of fresh green coriander chopped
  • Few juliennes of ginger

Procedure:

-Marinade meat in vinegar and meat tenderizer (best meat tenderizer is green papaya paste) for 12 – 14 hours.

-Heat oil in a deep pan and add onions and whole garam masala and fry until onions change their color. Now add lamb pieces, turmeric and ginger garlic paste. Stir fry for 10 minutes. Now add salt to taste on low medium heat cook the meat.

-When the moisture vanishes and oil comes up, add yogurt and tomatoes and other spices except for black pepper and cook on low heat until it takes a form of masala. This process will take approximately 20 minutes.

-Now add black pepper and stir. Take it out in a dish and garnish with garnishing ingredients written above.

-Serve hot with naan bread or tandoori roti.

Another Method:

• Mutton 1 kg
• Tomato 1/2 kg
• Green chilies 5-6
• Big green chilies 5-6
• Ginger garlic paste 2 tbsp
• Black pepper 1 tbsp
• Crushed cumin 1 tsp
• Oil as required
• Salt to taste

Put ghee or oil in a karahi.
Then put mutton, roast it and take out its oil.
Now put tomato, green chilies and ginger garlic paste, mix it nicely and roast it.
Now add water as required and cook until mutton tender.
Now add big green chilies, salt, crushed cumin and black pepper, mix it nicely and roast it.
In end, take out karahi in serving dish.
Then garnish with green coriander and green chilies and serve.
