Sweet Seviyan or vermicelli is the most important dish of Eid al Fitr. If Eid al Adha is known meat, then Seviyan is the delicacy of Eid al Fitr. In fact, the people of sub-continent have been cooking seviyan since ancient time. However, it has got kind of religious status in the Muslims of sub-continent who make special arrangements of this sweet dish on the holy day of Eid al Fitr.

Time has been changing continuously so that many improvements have been made into the receipt of vermicelli as well.
Meethi Seviyan Dry Recipe
Ingredients (used American measuring cup, 1 cup = 250 ml)
- 5 tbsp clarified butter (ghee)
- 1 cup roasted and crushed vermicelli
- 1 and ½ cup milk
- ½ cup sugar Or as required
- ¼ t/s cardamom powder
- ¼ t/s mace powder (optional)
- 6 to 7 broken cashew nut
- few almond flakes
- few pistachio flakes
- 2 dry dates soaked in hot water and chopped finely (optional)

How to make the recipe?
- Take a deep, wide pan add 1 tbsp ghee. Crush vermicelli with your
- Saute vermicelli in ghee for 2 mins on slow heat.
- Remove the roasted vermicelli. Now in the same pan add few drops of ghee.
- Saute dry dates and nuts for 2
- Add milk along with nuts. Also add sugar, cardamom, salt and mace powder.
- Stir all nicely add roasted vermicelli. Keep stirring in between.
- Simmer until vermicelli absorbs all milk and becomes dry. Don’t make it too dry.
- Serve hot Or chilled with tea Or as snacks.

Ingredients
- اُبلی رنگین سویّاں ایک پاؤ (Colour vermicelli 250 gm boiled)
- مکس فروٹ کوکٹیل ایک کپ (Mix fruit cocktail 1 cup)
- کریم ایک پیکٹ (Cream 1 packet)
- کھویا ایک کپ (Khoa 1 cup))
- ونیلا ایسنس چند قطرے (Vanilla essence few drops)
- مکس ڈرائی فروٹس سو گرام (Mix dry fruits 100 gm)
- چیریز گارنشنگ کے لئے (Cherries for garnishing)
- کنڈینسڈ مِلک ایک کپ (Condensed milk 1 cup)
How to make the recipe?
- ایک پیالے میں سویّاں، کنڈینسڈ ملک (condensed milk)، کریم (cream) اور ونیلا ایسنس (vanilla essence) شامل کرکے اچھی طرح سے مکس (mix) کرلیں۔
- اب ان کو گلاسز (glasses) میں شامل کرکے اوپر چیریز(cherries) ، مکس ڈرائی فروٹس (mix dry fruits)، مکس فروٹ کوکٹیل، کھویا اور کریم (cream) شامل کر دیں۔

Sweet Roasted Vermicelli
Ingredients:
- Half a packet of Pakistani/Indian roasted vermicelli – crush these into small pieces before adding to milk
- 25 grams caster sugar
- 100 grams of sweet condensed milk
- 1 pinch of saffron, soaked in 1 tbsp hot boiling milk
- 1 pint of whole milk/soya milk/almond milk
- A handful of chopped pistachios, almond, raisins
- 4-5 cardamom pods bruised open
- Ghee
- Decorate with silver leaf (optional)
How to make the recipe?
- Heat ghee in a saucepan on medium heat and add the cardamom. Once fragrant add the crushed vermicelli and keep stirring to avoid burning them.
- Once fragrant slowly add both the milk and keep stirring. Add sugar and stir and cook until the mixture becomes thick and vermicelli is cooked through.
- Pour in saffron and then place in a serving dish. Garnish with nuts and raisin – and silver leaf if available. Serve cold or hot.
Qawami Seviyan
Ingredients
- Vermicelli- 2 cups
- Ghee- 1 cup
- Milk- 3 cups
- Cardamom- 4-5
- Cloves- 4-5
- Sugar- 1 cup
- Almonds- 10
- Pistachios- 10
- Saffron- 1 pinch
How to make the recipe?
- Heat ghee in a deep bottomed pan. Sauté the cardamom and cloves in it.
- Keep the fried spices aside and fry the seviyan or vermicelli in the ghee.
- Keep stirring to prevent the vermicelli from getting burned. You need to fry the vermicelli for at least 5-6 minutes on a low flame.
- Meanwhile, heat 2 cups of water in a pan and add sugar to it. Keep boiling the sugar until it turns into thick sugar syrup. This should take about 6-8 minutes.
- Once the sugar syrup is made, pour the seviyan into it. Stir in 2 to 3 cups of milk and boil the mixture.
- In about 4-5 minutes, the milk will become creamy. Remember, seviyan has to be cooked with a minimum amount of milk for this dish.
- Garnish with fried cloves and cardamom. Also, decorate with almonds and pistachios.
